Homemade Irish Soda Bread
You will need:
450g plain or wholemeal flour
1 teaspoon salt
1teaspoon bicarbonate of soda
1/2 pint buttermilk (or milk and 50g melted butter)
3 or 4 tablespoons water
I know the blogging world went mad for the no-knead bread recently; but this bread recipe is even easier and tastes even better. This is good, honest rustic bread.
Just mix it all together, turn the dough out onto a floured surface and very gently and quickly shape it into a big, round bun. Cut a deep cross into the dough and bake for about 30 minutes at 200 degrees centigrade.
You’ll never guess why you have to cut a cross into the dough…it’s to let the fairies out!
